- Ancho chili, ground, 2 tablespoons
- Cinnamon, ground, 2 tablespoons
- Ancho powder, 1 tablespoon

In a large pan, combine the ground Ancho chili, cayenne pepper, Kosher salt, and heavy cream. Boil the ingredients with a cover on top and steep for at least 2 hours. Take a bowl and chop the Valrhona dark bitter chocolate into small 1 inch pieces. Add the chopped chocolate pieces to the cream mixture in the pan. Mix everything properly till there are no lumps remaining. If there are any lumps, you can make the mixture smooth over a double boiler. Now take a 2 inch pan and place parchment paper over it. Pour the mixture on top of the parchment paper and place in the refrigerator till it sets. Once the chocolate-spicy-cream mixture has set, take a small spoon and scoop out as many ganache balls as you can. Take each scoop between your hands and roll them into smooth balls. In a small bow, mix cocoa powder and Ancho chili powder together. Roll the ganache balls in the mixture, and place on a platter to serve.
